Maple Glazed Salmon with Garlic Mashed Potatoes and Grilled Asparagus

A hearty meal for this cold weather from Dorian Burns-Coyne, founder and owner of Blade & Skillet. Blade & Skillet is a website that features instructional cooking videos with recipes taught in three minutes or less. Dorian recently sent us one of his favourite recipes for Maple Glazed Salmon with Garlic Mashed Potatoes and Grilled Asparagus.

Main Ingredient: MAPLE GLAZED SALMON

Side Ingredients: GARLIC MASHED POTATOES AND GRILLED ASPARAGUS

Cook Time: 20 mins

Ingredients:

-1 Salmon Fillet
-1 Potato, Roughly Chopped
-1 Handful of Asparagus
-1 Spoonful Maple Syrup
-1 Spoonful Dijon Mustard
-1 Spoonful Soy Sauce
-2 Cloves of Garlic
-1–2 Splashes of Milk
-Butter
-Salt
-Pepper

Instructions:

-Bring pot of salted water to a boil while chopping potato into large chunks. Place in boiling water for 15 mins.

-Prepare sauce with equal parts maple, Dijon, and soy. Mix around, add salt and pepper, and spread over salmon.

-Drop salmon into warm skillet on medium high heat, skin side down. Cook for 5 mins a side (for a thick fillet).

-Drain water from potatoes, add butter, minced garlic, salt, pepper and a splash or two of milk. Mash until smooth and set aside.

-Melt butter in a second pan on medium high heat and throw asparagus in for 5 mins. Season with salt and pepper.

-Spread mashed potatoes on plate, lay salmon on top and stack asparagus next to it. Drizzle with remaining sauce and prepare to impress (yourself included).
