<h2>Japanese Souffle Pancakes</h2>
<p><em>Serving Size: 8-4&#8243; pancakes</em><br />
<em>Total Time: 2 hours 20 minutes</em></p>
<h3><span style="text-decoration: underline;">Ingredients:</span></h3>
<ul>
<li>4 eggs, separated plus one extra egg white</li>
<li>2 tablespoons Mazola® Vegetable Oil</li>
<li>1/3 cup buttermilk (to make combine 1/3 cup milk with 1 teaspoon apple cider vinegar)</li>
<li>1 teaspoon vanilla extract</li>
<li>3/4 cup cake flour</li>
<li>1 tablespoon Fleischmann’s® Corn Starch</li>
<li>1 teaspoon Fleischmann’s® Baking Powder</li>
<li>1/2 teaspoon salt</li>
<li>1/4 teaspoon cream of tartar</li>
<li>4 tablespoons sugar</li>
<li>For frying, use Mazola® Vegetable Oil</li>
</ul>
<h3><span style="text-decoration: underline;">Directions:</span></h3>
<ol>
<li>Whisk egg yolks with oil, buttermilk and vanilla for 1 minute, set aside. In a separate bowl, sift cake flour, cornstarch, baking powder and salt together, gradually add to egg yolk mixture to make batter, just until combined.</li>
<li>Using an electric mixer with a whisk attachment, in a grease-free, deep bowl, whip egg whites with cream of tartar and sugar on high speed, beat until stiff peaks form about 6 minutes.</li>
<li>Preheat frying pan over medium-low heat.</li>
<li>Fold half of the egg whites in the batter mixture, mixing gently with a spatula to retain the air in the egg whites. Fold the remaining egg whites into the batter, mix gently.</li>
<li>Add 1 teaspoon of oil to frying the pan. Using a large ice cream scoop, place heaping scoops, about 4” round of batter onto preheated pan, leaving 2” between each pancake to leave room for expansion and to flip the pancakes. Add another half scoop on top to build more height.</li>
<li>Add a teaspoon of water to the pan and cover with a tall lid to trap steam.</li>
<li>Allow to cook for 4 minutes before checking the bottoms for browning, lower temperature if too dark, continue to cook until deep golden brown and sides feel set and not sticky, about 4 to 6 minutes, be patient, don’t flip too soon or you might break your pancakes.</li>
<li>Once ready, carefully flip and cook for approximately 4 minutes more, depending on the thickness of your pancakes. Test sides of pancakes for doneness if they are firm.</li>
<li>Top with your favourite pancake toppings!</li>
</ol>

<h2>Japanese Fluffy Pancakes</h2>
<h3><span style="text-decoration: underline;">Ingredients:</span></h3>
<ul>
<li>All Purpose flour 230gr</li>
<li>Baking powder 24gr</li>
<li>Organic whole milk 280gr</li>
<li>Cage Free large eggs 2ea</li>
<li>Egg white 40gr</li>
<li>Organic sugar cane 70gr</li>
<li>Gream of tarte 1gr</li>
<li>Spray Coating, Vegalene 5</li>
<li>35% cream 300 ml</li>
<li>Maple syrup 50 ml.</li>
<li>Peanuts 15gr</li>
</ul>
<h3><span style="text-decoration: underline;">Directions:</span></h3>
<p>1. Add eggs, egg whites, sugar, and cream of tartar to a mixer with a whisk attachment.</p>
<p>2. Whisk on high speed until a pale, light and fluffy texture is achieved ( 8-10 min)</p>
<p>3. In the meantime, place flour, baking powder and milk into a medium size mixing bowl, whisk to a smooth paste.</p>
<p>4. Fold the mixture from the mixer into the milk and flour mix in a folding motion, taking care not to knock the air out.</p>
<p>5. Grease a nonstick pan and using a ladle, pour the mixture one at a time.</p>
<p>6. Cook each pancake on a medium-low heat on each size until golden brown.</p>
<p>7. Lightly whip some cold 35% cream.</p>
<p>8. Serve pancakes with whipped cream, maple syrup and crushed peanuts.</p>

										<content:encoded><![CDATA[<p>The <strong>Canadian National Exhibition</strong> (CNE) is an annual end of summer tradition for many. The food itself is one of the biggest draws as vendors always try to bring the zaniest carnival foods to grab our attention. This year ranges from cheeseburger soft serve ice cream to a crispy blueberry chicken wedged between two glazed donuts to Barbie pink Mac n&#8217; Cheese with caviar! There&#8217;s actually tons of Barbie inspired food, anyone surprised?</p>
<p>Inspired by one of the more delicious food vendors, FUWA FUWA Pancakes, you might want to try this recipe for Souffle Pancake Sundaes at home! If you&#8217;ve ever had the Japanese style pancakes you know why we are all raving. The fluffiness raises the bar on pancakes and we are definitely &#8220;EX&#8221;cited to make these at home!</p>

<h2>Souffle Pancake Sundaes</h2>
<p><em>Serves 2 plates with 3 pancakes each</em></p>
<h3><span style="text-decoration: underline">Ingredients</span>:</h3>
<ul>
<li>4 egg whites</li>
<li>2 tbsp granulated sugar</li>
<li>1 tsp lemon juice</li>
<li>3 egg yolks</li>
<li>1/4 cup local Ontario whole milk</li>
<li>6 tbsp cake flour</li>
<li>1/2 tsp baking powder</li>
<li>1-2 tbsp local Ontario unsalted butter</li>
<li>4 scoops local Ontario vanilla ice cream</li>
<li>Sprinkles</li>
<li>Chocolate sauce</li>
<li>Other toppings of choice: cookies, pretzels, fruit.</li>
</ul>
<h3><span style="text-decoration: underline">Directions</span>:</h3>
<p>1. In a clean dry bowl, whip the egg whites using hand or stand mixer.</p>
<p>2. Gradually add the sugar and continue to beat until stiff peaks form, about 3 minutes. Fold in the lemon juice. Set aside.</p>
<p>3. In a separate bowl, mix together flour, sugar, baking powder, milk and yolks.</p>
<p>4. Gently fold the meringue into the batter until a smooth mixture forms.</p>
<p>5. Heat a griddle or non-stick pan to medium low. Grease the surface with a small amount of butter.</p>
<p>6. Place the mixture into a piping bag. Pipe 3/4 cup portions directly onto the surface of the pan. Let cook for 4 minutes. Flip and cook on the other side for about 3 more minutes or until cooked through. Repeat with remaining batter.</p>
<p>7. Stack 3 pancakes then top with ice cream, cookies, sprinkles, and toppings of choice.</p>

Whether that be during breakfast, a special brunch for a loved one, pancakes for dinner or all day celebratory pancakes. This week&#8217;s recipe comes from<a href="http://mildreds.ca/" target="_blank" rel="noopener noreferrer"> Mildred&#8217;s Temple Kitchen</a> and is their famous Mrs. Biederhof’s Blueberry Buttermilk Pancakes!</p>

<h2><span style="text-decoration: underline;">Blueberry Buttermilk Pancakes</span></h2>
<p><span style="text-decoration: underline;"><strong>Ingredients</strong></span></p>
<p>&#8211; ¼ cup of white sugar<br />
&#8211; ½ tsp of salt<br />
&#8211; 2 cups of all-purpose flour<br />
&#8211; 2 ¼ tsp of baking powder<br />
&#8211; ½ tsp of baking soda<br />
&#8211; 3 large eggs<br />
&#8211; 2 cups of buttermilk<br />
&#8211; ⅓ cup of melted unsalted butter<br />
&#8211; 1 cup of fresh blueberries<br />
&#8211; And some extra unsalted butter on hand to grease the skillet</p>
<p><span style="text-decoration: underline;"><strong>Directions</strong></span></p>
<p>1. In a large bowl, sift together the flour, sugar, salt, baking powder and baking soda.</p>
<p>2. In a separate bowl, beat the eggs with the buttermilk and melted butter.</p>
<p>3. Using a spatula, combine the dry and wet ingredients to make a thick, lumpy batter, taking care not to overmix. The real trick to these is in the mixing. If you overmix the batter, your pancakes won’t be moist and delicate.</p>
<p>4. In a nonstick skillet, melt some butter over medium-high heat. Ladle ⅓ cup of batter into the hot skillet and sprinkle with blueberries. Take care not to overcrowd the skillet, since the pancakes will puff up as they cook.</p>
<p>5. When bubbles appear on the surface of the pancake and the edges begin to brown, flip the pancakes and cook the other side. It should take about 2 to 3 minutes per side. Keep them nice and warm by keeping them in a 250ºF oven.</p>
<p>6.  Smother with maple syrup, fresh blueberries, dollop with whipped cream and maybe even a good dusting of icing sugar.</p>

<p>The founder of this event is Tom Kirlin, who we chatted to for our latest &#8220;A Day in the Life&#8221; series.</p>
<p><strong>BIO</strong></p>
<p>Tom Kirlin, 37, left his movie career as a Hollywood cameraman to start Pancakes &amp; Booze in 2009. Born in Tucson, Ariz., he’s a travel fiend who has visited over fifty countries across every continent but Antarctica. At 6-foot-6, he’s a hell of a ringer in pick-up basketball games.</p>

<p><strong>What do you do and where? </strong></p>
<p>I am the creator of The Pancakes &amp; Booze Art Show. Pancakes &amp; Booze is a massive pop-up art show that I hold in 30+ cities around North America and Europe. 100 emerging artists, live music, DJ sets, live painting, and FREE PANCAKES all in one night, under one roof!!!</p>

<p>I am based between Los Angeles, California and Bangkok, Thailand.</p>
<p><strong>What are you working on right now? </strong></p>
<p>Right now I&#8217;m getting ready to host Toronto&#8217;s 5th Pancakes &amp; Booze Art Show in 3 years. On April 22nd we&#8217;ll be back at The Opera House putting on another event.</p>
