The event features a specially curated Flavour Passport ($), granting guests access to eight globally inspired dishes served in hearty, appetizer-sized portions. Base31 is thrilled to welcome two award-winning guest chefs—Chef Roger Moore and Chef Sang Kim—who will be serving up delicious creations alongside Base31’s beloved kitchens. 										<content:encoded><![CDATA[<p>When we think of Italian fare, we often don&#8217;t realize the various regions and the influences they have on a wide range of tastes and dishes. Northern Italy is different from the southern parts and even Milan has its own dishes that are distinctly Milanese. This winter, Eataly is offering us another great opportunity to explore Italy&#8217;s incredibly diverse cuisines. This time, we venture to the Italian Alps where you can imagine dishes are richer and heartier. It&#8217;s comfort food levelled up.</p>

<p>ALPINA, named after the iconic landscape of the Italian Alps, is an immersive design inspired by the <em>baita</em>, or mountain cabins, that can be found scattered across this region. ALPINA transports guests with this seasonal event with indulgent Alpine cuisine and warming cocktails alongside events and workshops. It&#8217;s a taste of the European après-ski lifestyle right here in the city!</p>

<h2><strong>What&#8217;s on Eataly&#8217;s ALPINA Menu:</strong></h2>
<p>We went straight to the Eataly Yorkville destination to discover traditional dishes influenced by the most northern parts of the Italian Alps within the La Piazza Restaurant with its light and airy spot by the windows. Flavours, cooking techniques, and ingredients from neighbouring countries like Switzerland can be found in the featured dishes here along side their much loved Raw Bar. Highlights from the ALPINA feature include:</p>
<p><strong>Polenta Bar:</strong> A staple of Northern Italy! This creamy, stone-ground cornmeal is served on a wooden board with several tasty options. We opted for the Salsicce e Funghi, a house made pork sausage, grilled and served over the comfort of polenta and topped with Asiago cheese and sautéed mushrooms.</p>
<p><span style="box-sizing: border-box; margin: 0px; padding: 0px;"><strong>Fondue di Formaggio:</strong> When we think of skiing in the Alps, the first dish that comes to mind is the popular cheese fondue. This tummy-warming dish, made with Fontina DOP and served with toasted Focaccia croutons, is perfect for sharing over great conversation while you blissfully dream about travels.</span></p>

<p><strong>Canederli:</strong> Closely related to bread dumplings of Germany, these flavourful bread and speck gnocchi from the region of Trentino-Alto Adige are served with Urbani Black Truffle Butter, sage, and Agriform Parmigiano Reggiano DOP. This was a new dish discovery to us and we fell in love instantly!</p>
<p>We learned that the Urban Black Truffle was founded in the early 1850s and contuse to be under the guidance by the sixth generation of the family. They work with truffle hunters who are connected to the land. The truffles are foraged by specially trained dogs in accordance to ancient traditions.</p>

<p><strong>Cotella Alla Valdstanta:</strong> Originating from the region of Valle d’Aosta, this version of a crisp breaded chicken cutlet is stuffed with Mila Alta Badia cheese, Rovagnati Prosciutto Cotto, and sauteed spinach.</p>
<p><strong>Speck e Zucca Pizza:</strong> a delicious addition to the Torino style pan pizza using roasted butternut squash, Recla Speck, Fontina DOP and mozzarella.</p>
<p><strong>Brasato al Vino Rosso:</strong> A hearty comforting dish to try is the red wine braised short rib over polenta and roasted root vegetables.</p>
<p><strong>Chocolate Fondue:</strong> With fondue on our minds we were drawn to this finishing touch with a decadent and delicious pot of melted dark chocolate, fresh strawberries and crispy Italian cookies.</p>

<p><strong>ALPINA COCKTAILS:</strong> we were drawn by the soul-warming options and here there are several tempting drinks to explore. We were drawn to the<strong> Dolomite Glow</strong> (Bourbon Whisky, Hot Water, Honey, Lemon, Cinnamon) and the <strong>Bombardino</strong> (Egg Nog Liquor, VSOP Brandy, Whipped Cream, Cinnamon).</p>

<p><strong>Bacon, Butter, Bourbon &amp; Chocolate Cookbook by Brian Feldeisen</strong></p>
<p>In <i>The Bacon, Butter, Bourbon, and Chocolate Cookbook</i>, Chef Bruno focuses on four distinct ingredients to create some of his favourite recipes. Each one of these ingredients is remarkable on its own and together they produce a range of tastes and experiences that all food-lovers are greedy for salty, sweet, silky, chewy.</p>
<p>Bruno Feldeisen was born in the small French town of Clermont-Ferrand. He began his career as an apprentice at one of France&#8217;s most renowned chocolate shops in Moulins: Les Palets d&#8217;Or. He graduated from his apprenticeship with an almost-perfect score. After working as a chocolatier at Hotel de Paris in Monaco under the leadership of Chef Alain Ducasse, Bruno moved to the United States in 1988, working in a number of prestigious restaurants and hotels in California such as Patina and the Highlands Inn. In 1994, he became the executive pastry chef at the Four Seasons Hotel in New York. Bruno&#8217;s culinary journey continued when opened Soléa, an American-French restaurant in San Francisco. He later became a pastry chef instructor at the Pacific Institute of Culinary Arts in Vancouver, British Columbia and the executive pastry chef at the Four Seasons Hotel in Vancouver. Feldeisen was named one of the Top 10 Pastry Chefs in America by Chocolatier Magazine two years in a row and has been nominated twice for the James Beard Award for Outstanding Pastry Chef. He has been a judge for all eight seasons of The Great Canadian Baking Show on CBC Television.</p>

<p>Len Senater founded The Depanneur in 2011 as “A Place Where Interesting Food Things Happen”, and if the 1,000+ pop-up food events they’ve hosted since then are any indication, he has kept his word.</p>
<p>The Depanneur became best known for hosting unique, family-style dinner parties and fun, hands-on cooking classes that showcase the remarkable diversity of Toronto’s culinary talent. After more than a decade operating out of a converted corner store on College St., The Dep, as it’s known amongst regulars, reopened as a new culinary event space at the Center for Social Innovation in 2024.</p>

<p><a href="https://casaloma.ca/project/march-break-imagine-dragons/" target="_blank" rel="noopener"><strong>Imagine Dragons at Casa Loma:</strong></a> March 11 to 19. Travel back to a world of fantasy and fables at a fairy-tale castle in an era of dragons and adventure, as Liberty Entertainment Group presents the return of its best-selling immersive theatrical experience, Imagine Dragons. Featuring Paramount Pictures upcoming release <em><strong>Dungeons &amp; Dragons: Honor Among Thieves</strong>. </em>Multiple interactive live performances in the castle featuring period costumed characters will transport visitors both young and old, back in time to a bygone era of knights and maidens, fairies, and other worldly creatures. Follow the 800-foot underground dragon-infested tunnels to meet the beast… in the veritable Dragon’s Den. Themed programming includes A Tale of Two Brothers – fun, interactive and educational play demonstrating medieval sword action in the castle’s Conservatory, to next-level Knight School, located in the Library – where guests may participate in basic swordsmanship taught by the knights, including types of swords and the how’s and whys of basic sword play, from which students will graduate as Knights of Casa Loma, with an authentic certificate.</p>
<p>Medieval music concerts by five-piece ensemble, The Casa Loma Minstrels under the baton of Maestro Paolo Busato. Performing live in the Great Hall, visitors may meet the Maestro and interact with the ensemble and their musical instruments. An aerialist will demonstrate feats of wonder in the Great Hall, and guests are encouraged to visit the dungeon for Dungeons and Dragons film-themed art and crafts, before daring to visit the Dragon himself in his mythical lair. <p><a href="https://winterstations.com" target="_blank" rel="noopener"><strong>WinterStation at Woodbine Beach (FREE):</strong> </a>The annual public art installations return to the Toronto east end beaches. Set along the waterfront award-winning artists and design firms transform existing lifeguard stations into structures worthy of a visit or two.  This year&#8217;s theme is RADIANCE. Dress for the weather and the terrain. Then pop up to Queen Street for a a bite to eat or a hot chocolate to warm up.</p>
<p><a href="https://ontarioplace.com/en/event/lumiere-the-art-of-light/2023-03-10/" target="_blank" rel="noopener"><strong>Lumière at Trillium Park, Ontario Place (FREE): </strong>March 10 to May 7. </a>Explore the park and experience 16 illuminated installations developed by Ontario artists before stopping by the bonfire to warm up. Utilizing innovation, light and discovery, Ontario artists and creators will “illuminate” the park under a curatorial theme of “renewal”, celebrating the change of seasons from winter to spring. Dress warm and wear comfortable footwear for this outdoor experience. Lumière is open daily from 5 p.m. until 11 p.m. with a bonfire hosted on Fridays and Saturdays from 5 p.m. until 10 p.m. More details on their site.</p>

Featuring more than 40 models and casts, many full-sized and towering over guests. Visitors will also be invited to delve into the paleontological process with a special ROM Spotlight section highlighting actual fieldwork from a recent ROM-led tyrannosaur dig. Fans of this celebrity dinosaur will also have the opportunity to experience up-close an imposing real fossil T. rex skull almost five feet long along with other fossil specimens. And let&#8217;s be honest, we need something to break up the cold winter months. If you&#8217;re looking for something special to do with someone you love (friends included!) and at various budget options, we have a few ideas.</p>
<p><strong>1. CASA LOMA</strong></p>
<p>Nothing says romance like a visit to a castle. Toronto&#8217;s most famous Casa Loma continues to make full use of the enchanting hallways and spaces with amazing events. Back is the beautiful <strong><a href="https://casaloma.ca" target="_blank" rel="noopener">Twilight Symphony at the Castle</a> </strong>Concert series performed by the Casa Loma Symphony Orchestra conducted by Maestro Paulo Busato. Follow the tunnels through to the iconic stables of the castle to enjoy an unforgettable night filled with music. Make it extra special and book dinner at BlueBlood Steakhouse right on the castle grounds. Casa Loma&#8217;s famous<strong> High Tea</strong> is returning also for family day weekend and that&#8217;s always such a treat!</p>

<p><strong>2. THE DISTILLERY DISTRICT</strong></p>
<p>Bundle up and stay cozy at this year&#8217;s <strong>Après Ski </strong>themed weekends at<strong> <a href="https://www.thedistillerydistrict.com" target="_blank" rel="noopener">The Distillery District</a></strong>. It will also be open on Valentine&#8217;s Day (February 14) from 3pm to 9 pm. Gather around toasty warm fire pits in the wintery picturesque setting. Wander the cobblestone lanes and poke into the many shops, galleries, restaurants and cafe to support artisans and small businesses. Enjoy food and drinks offered by local vendors in this historical part of town. Some favourite places  to explore here: SOMA Chocolatiers, Palgong Tea, Ontario Sake, Galerie Beauchamp, H2O Float Studio, Blackbird Vintage Finds, and Lemon Water.</p>
<p><strong>3. THE POWER PLANT CONTEMPORARY ART GALLERY &amp; THE BENTWAY</strong></p>
<p><a href="https://www.thepowerplant.org" target="_blank" rel="noopener"><strong>The Power Plant Contemporary Art Gallery</strong></a> (Harbourfront) has reopened its doors once again to the public with three new exciting exhibitions: Cree artist Brenda Draney&#8217;s largest exhibition to date titled <em>Drink from the river</em>, UK artist Amartey Golding&#8217;s <em>In the comfort of embers</em>, and an exhibition comprised of all local artists,<em> in parallel</em>. Bringing together six artists, including Toronto-based artist and writer Simon Fuh, emerging Trinidadian artist Anique Jordan, and Mi’kmaq (Metepenagiag Nation) settler artist and educator Julia Rose Sutherland, the group exhibition presents a variety of different mediums, like film, sculpture and photography. Admission free. Explore the latest works and then head next door to wander through the studios or visit a local restaurant or cafe to round off the visit. Or head over to <a href="https://www.thebentway.ca" target="_blank" rel="noopener"><strong>The Bentway</strong></a> for outdoor skating check their schedules for DJs and other happenings. QuadReal Property Group have commissioned four Canadian female artists to create bright and uplifting pieces available for public viewing. Toronto artists <strong>Samara Shuter</strong> and <strong>Jessica Gorlicky</strong> and New Brunswick artist <strong>Alexandrya Eaton</strong> have six large-scale murals in Commerce Court. Find your way to Southcore Financial Centre to see Toronto artist <strong>Hello Kristen</strong>&#8216;s work on the second floor PATH connecting 18 York and 12o Bremner. If you do decide to surface go see &#8220;The Pasture&#8221;sculptures by artist<strong> Joe Fafard</strong> at TD Centre (located in between the tall buildings in the green space). There&#8217;s also &#8220;Tembo, Mother of Elephants&#8221; by artist <strong>Derrick S. Hudson</strong> located at Commerce Court outdoors.</p>

<p><strong>8. DOVA and ARDO</strong></p>
<p>We love <a href="https://dovarestaurant.com" target="_blank" rel="noopener"><strong>DOVA</strong> </a>as it hits all the marks. DOVA&#8217;s dining room is soothing and tranquil with it&#8217;s soft colour palate. The coastal Sicilian Italian menu is fresh and exciting. Chef and owner Roberto Marotta had his own restaurant in Sicily before he met the love of his life and moved here to Toronto. Everything about this restaurant, is all about passion. From the ingredients used &#8211; fresh produce and meats are sourced locally to the artwork on the walls from Marotta&#8217;s personal collection. He, and his wife Jaqueline have also imported their favourite Sicilian ingredients available for purchase. DOVA has a special <a href="https://dovarestaurant.com" target="_blank" rel="noopener">Valentine&#8217;s Tasting Menu</a> that is definitely worth booking in for. And they do it well! The prix-fixe menu offers a locally sourced 10 oz striploin steak grilled to order, endless fries (seriously), side salad, and fresh baked bread.  Let owner Jad and his staff take care of you but save room for the incredible desserts! Pastry Chef Tara will make you swoon over her made-in-house creations and for Valentine&#8217;s special (February 12) diners will have a chance to decorate their own cake table side. This neighbourhood gem is perfect for a casual date night or with friends.</p>

Taste your way around 10 different stations featuring delicious chef-curated creations with a focus on the Italian love of sweets with dishes such as Roman-style pizza alla pale topped with gorgonzola and hot honey, Sicilian style housemade canopies and more!  If you prefer a sit down meal,<a href="https://www.eataly.ca/news/trattoria-milano-italian-restaurant-toronto/" target="_blank" rel="noopener"> <strong>Trattoria Milano</strong></a> is a great escape within the busy Eataly food market. Tucked away in a corner behind curtains is a quieter spot serving traditional Milanese dishes including Osso Bucco, risotto, and Coteoletta alla Milanese traditional &#8220;elephant ear&#8221; a thinly pounded veal chop breaded and fried. This restaurant is offering a special six-course menu for Valentine&#8217;s.</p>
