Vegan Valentine Recipe: The Red Smoothie Goddess Bowl

When it comes to Valentine’s Day, I love when my honey gets busy in the kitchen…(I’m talking about preparing a meal here). What is it about watching someone passionately working away in a kitchen? I know when planning a sexy meal, certain foods come to mind…raw oysters, chocolate covered strawberries (chocolate drizzle on anything really) but this recipe came to my attention as I’ve been hooked ever since a few years ago when I was in California and smoothie bowls started showing up everywhere!

There’s more to be said when you have an impressive dish that is well thought out. Not only is this recipe from Kupfert & Kim gorgeous, it will give you energy….er, for may later? They call it a Red Smoothie Bowl but I think it’s a Goddess Bowl as it’s beautiful and confident.

Aside from being known as a great detoxifying natural ingredient, Beets also boosts your stamina. I’ve also added in Pomegranate seeds as I understand they were the Greek Goddess Persephone’s favourite fruit!

The Red Bowl (Goddess) Smoothie Bowl
-1 1/2 cups beets
-1/2 cup water
-1/2 banana
-1 cup ice
-1/2 avocado
-1/2 tbsp cashews (preferably soaked)
-1 date, pitted
-1/4 tsp ground flax seed
-1/2 tsp of lemon juice
-1/2 tsp of fresh ginger
-1 pince of salt
-1 dash of pure vanilla (or extract)
Toppings:
-1 tsp hemp seeds
-1 tsp chia seeds
-2 tbsp of favourite granola
-2 tbsp blueberries
-3-4 banana slices
-Or any other fruit, nut, seed, superfood of your choice
 
Directions:
1) Wash beets well. Leave skin on and boil until soft.
2) Pour water into blender.
3) Add beets and remaining ingredients into blender, and blend until creamy.
4) Pour mixture into bowl, and place toppings in horizontal lines on top. Serve immediately.
